Under HB25-1295 (effective January 1, 2026), Colorado has health and fire reciprocity — a food-truck health permit or fire inspection issued by any Colorado jurisdiction is accepted statewide.

In Conejos, health is overseen by Conejos County Public Health and fire by Conejos' fire authority — the local authorities whose permits and inspections Colorado recognizes statewide.

If your event requires permitting, you'll work directly with Conejos County.

Licensing and insurance documentation is confirmed for the catering team assigned to your booking and can be shared with your venue on request.
