Crock Pot Carnitas

  • 2 White Onions
  • 4oz Hatch Green Chilis
  • 2 Navel Oranges
  • 8 Pieces Peeled Garlic (3 cloves)
  • 5lbs Pork Butt
  • 2 Limes
  • 12oz Dr. Pepper
  • 1 Cup Olive Oil
  • 1/2 C Dark Chili Powder
  • 1/2 C Cayanne Pepper
  • 1/4 C Black Pepper
  • 1/4 C Garlic Salt
  • 1/4 C Brown Sugar
  • 1/4 C Sea Salt

Instructions:

Step 1: Mis en Place
  • Quarter 2 oranges, but don’t peel
  • Cut 2 onions in half, and julienne strip 1/4in
Step 2: Place Vegetables in Crockpot
  • Add 4oz can of Green Chilis
  • Add Onions
  • Add Oranges
  • Add 6 Cloves Garlic
Step 3: Make Your Rub
  • Combine the following spices in your bowl and mix evenly.
    • 1/2 C Dark Chili Powder, 1/2 C Cayanne Pepper, 1/4 C Black Pepper, 1/4 C Garlic Salt, 1/4 C Brown Sugar,1/4 C Sea Salt
  • Coat Pork Butt in Oil
  • Sprinkle meat rub seasoning over oiled pork butt and rub thoroughly
  • Place pork in crockpot
Step 4: Seal Your Crockpot
  • Add 12oz of Doctor Pepper
  • Sprinkle extra meat seasoning over crockpot for added spice.
  • Turn crockpot onto low heat setting for 10 hours and walk away
Step 5: Finishing Touches
  • Now that your meat is cooked, pull it out of crockpot
    • BE CAREFUL MEAT IS HOT!
  • Shred meat by hand removing excess fat from pork.
  • Once Shredded quarter 2 limes and squeeze juice over pork
Step 6: Eat!
